When ripe, cashew nuts are harvested by hand from the cashew tree.
Once harvested, the nuts are shelled one by one, then sorted to keep only the best, dried and lightly salted.
Cashew nuts are traditionally produced in Ghana by small-scale producers.
Ghana's climate encourages the cashew nut to grow without too much effort. Most cashew nuts grow wild, and their trees produce fruit once a year.
At the base of the fruit is the raw nut.
